Choco Chips Muffins

Try this recipe for snacks. My children love muffin cakes and I served them this homemade muffins.They liked them!

Ingredients
1 200g Maya Chocolate Hotcake Mix
1 piece egg
½ cup water
2-3 tbsp oil

Procedure
1. Preheat oven to 350 degrees Fahrenheit. Line 6 3 oz. muffin tins with paper cups.
2. In a bowl, combine egg,water, and oil. Add cake mix and beat with a wooden spoon
until smooth, about 80 to 100 strokes.
3. Spoon cake mix into about 3/4 of the paper cups. Top with choco chips and bake for 15 minutes or until done.

Pork Barbecue

Are you planning to have an outdoor party? Why not delight your friends and visitors with this barbecue recipe?

Ingredients
2 kilo pork slices (liempo)
1 bottle 7-UP
1 cup brown sugar
1/2 cup soy sauce
1/2 cup vinegar
2 Tablespoons minced garlic
2 Tablespoons hot sauce or fresh chili peppers sliced thinly
2 Tablespoons worcestershire sauce
3 Tablespoons salt
Semi-ground black pepper

Procedure
1. Slice the pork liempo according to desired thickness. Set aside.
2. In a large saucepan or bowl, pour the 7-up, brown sugar, soy sauce, vinegar, minced garlic, hot sauce or chili peppers, Worcestershire sauce and salt.
3. Mix until no sugar granules can be felt. Add in the pork slices.
4. Grill .

Tocino Home Recipe

Kids love cured meat. Buying them from the supermarket may be expensive and not so healthy. Why not do it yourself? It’s easy as ABC.

Ingredients:
2 lbs. of pork/pork chops or red loin with fat, sliced into 1/4 inch thick
2 tablespoons of anise wine
2 tablespoon of annatto water
2 tablespoon of salt
2 tablespoon cooking oil
4 tablespoon of sugar
1/8 teaspoon of salitre ( saltpeter ) ( Note: Saltpeter may be optional because it’s only a coloring agent )

Procedure:
1. Except for the pork, combine all the dry ingredients in a shallow pan;on another container,combine the wet ingredients.
2. Sprinkle the mixture onto the pork and make sure that it is distributed evenly.
3. Pile the pork inside a container with a cover and keep refrigerated for about 3 days to cure the pork.
4. To cook, just put a little water in a skillet and add the pork and fry it until done.

We, Filipinos love to eat. Aside from the three meals, we also have “merienda”. Merienda served to the family can be an exciting treat to the family members especially if it’s something freshly cooked from the kitchen…sprinkled with a touch of tender loving care!

Try this chicken empanaditas for merienda (snacks).

Ingredients
3 tablespoons chopped onion
3 tablespoons butter
1 3/4 cups shredded, cooked chicken meat
3 tablespoons chicken stock
1/4 teaspoon garlic salt
1/4 teaspoon poultry seasoning
1/4 teaspoon ground black pepper
1 (3 ounce) package cream cheese, diced
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon paprika
1 cup butter, chilled
5 tablespoons cold water

Procedure
1. In a large skillet saute the onion in the butter until tender. Stir in the chicken, chicken broth, garlic salt, poultry seasoning, pepper and cream cheese. Remove from heat and set aside. (This is very important!)
2. Preheat oven to 375 degrees F (190 degrees C).
3. In a large bowl mix together the flour, salt and paprika; cut in butter until mixture resembles coarse crumbs. Gradually add water, tossing with a fork until a ball forms.
4. On a floured surface roll out the pastry to 1/16 inch thick. Cut with a 2 1/2 inch round cookie or biscuit cutter. Reroll scraps and cut more circles until the pastry is used up.
5. Mound a heaping teaspoon of filling on half of each circle. Moisten edges with water and fold pastry over filling to make a half moon shape. Press edges with a fork to seal. Prick tops with a fork for steam vents.
6. Place empanaditas on a baking sheet and bake at 375 degrees F (190 degrees C) for 15 to 20 minutes or until golden brown.

Pork Adobo Recipe

Adobo is commonly made of chicken, pork, squid (pusit) or vegetables cooked in vinegar, soy sauce, garlic, peppercorns and bay leaf.

If you are just learning how to cook adobo, try this adobo starter recipe. Once you’ve gotten the hang and flavor of adobo, you can make magic with other adobo recipe variants like chicken, squid or vegetables.

Ingredients
1 lb pork loin, cut into chunks
1 head garlic
1/4 cup soy sauce
1 teaspoon black pepper(freshly ground)
1/2 cup white vinegar (sukang puti)
1 tablespoon of vegetable oil

Procedure

  1. Place the pork in a medium-size pot together with the garlic soy sauce pepper and vinegar and let stand for 2 hours.
  2. Cook in slow fire in the same pot until the pork is tender (about 30 minutes). Transfer pieces of garlic to a separate pan and fry in hot oil until brown.
  3. Add the pork pieces to the garlic and then fry until brown. Brown the pork before adding the soy sauce mixture in order to let more of the fat out. Drain.
  4. Add the broth to the fried pork and garlic and simmer for 10 minutes.

There you have it! You’re first pork adobo masterpiece. Enjoy!
